Pinocchio has been a friend of Ireland AM for many years. We would like to share the recipes Giuseppe Crupi, director of the Pinocchio Italian Cookery School, prepared live on the program to show how to embrace traditional dishes.
The recipe of the day is: Mushroom Risotto in Parma Ham.
An amazing main course perfect for every occasion!
Serves 4 people
350 g Carnaroli rice
200 g mushrooms (fresh or frozen)
50 g of Parmesan cheese
30 g dry white wine
30 g extra virgin olive oil
parsley to taste
850 g vegetable broth
TO BE ADDED BEFORE SERVING:
100 g Parma ham sliced
100 g cheese
