Arancini di Riso

Pinocchio has been a friend of Ireland AM for many years. We would like to share the recipes Giuseppe Crupi, director of the Pinocchio Italian Cookery School, prepared live on the program to show how to embrace traditional dishes.

The recipe of the day is: Arancini di riso.

“Arancini” are a typical Sicilian specialty! A delicious street food loved around the world! They are tasty stuffed rice balls perfect as a snack, appetizer, first course, or even a main course. In Sicily, they’re found everywhere, always hot and fragrant, in the many fry shops..

Ingredients:

(For about 10 arancini)

For the rice:
500 g Carnaroli or Vialone Nano rice
70 g butter
0.15 g saffron

Salt

For the ragù:
150 g minced pork
50 g minced beef
1/2 onion
1/2 carrot
A small piece of celery
2 bay leaves
2 cloves
2-3 tablespoons extra virgin olive oil
200 ml Blended Peeled tomatoes
100 g peas
1/2 glass white wine (optional)
Salt

80 g grated caciocavallo cheese + 50 g chopped (optional)

For the breading: 
00 flour (6-8 tablespoons, or a little more depending on how much the arancini absorb)
2 eggs
