Pinocchio has been a friend of Ireland AM for many years. We would like to share the recipes Giuseppe Crupi, director of the Pinocchio Italian Cookery School, prepared live on the program to show how to embrace traditional dishes.
The recipe of the day is: Calzone (folded pizza).
Calzone is an Italian gastronomic specialty in which a filling of various kinds is enclosed in a pasta shell and then baked or fried. The traditional Neapolitan recipe calls for filling the calzone with ricotta, provola, fiordilatte, salami, and parmesan.
(Serves 6 people)
300 gr water
25 gr fresh yeast
5 gr sugar
10 gr salt
35 gr extra virgin olive oil
1 bottle tomato sauce
Mozzarella cheese
Extra virgin olive oil
All other topping you like
