Oven baked stuffed aubergines

Pinocchio has been a friend of Ireland AM for many years. We would like to share the recipes Giuseppe Crupi, director of the Pinocchio Italian Cookery School, prepared live on the program to show how to embrace traditional dishes.

The recipe of the day is: oven baked stuffed aubergines.

4 aubergines
300 g of minced meat
150 g of breadcrumbs
150 g of mozzarella cheese
30 g of parmesan
1 egg
some basil leaves
salt to taste
pepper to your liking
oil to taste
